"I am no stranger to Urvashi's recipes. I have her first cookbook, the Indian Instant Pot Cookbook and love the recipes. No way I am missing out on her Keto cookbook! I ordered both the paperback and Kindle version (so I can start cooking!). After glancing through the whole cookbook, I decided to make the Thai Yellow Curry Chicken Soup. But I don't have yellow curry so I substitute with green curry. That's how Urvashi's recipe is from the beginning. It is very versatile and very forgiving. You can easily substitute ingredients (tofu for chicken, yellow curry for green curry etc) and it does not take away from the taste. The Thai 'Green' Curry Chicken Soup turned out amazing!
